CRAB CAKES

CRAB CAKES
Recipe By : Jeff Burns Serving Size : 4 Preparation Time :0:30 Categories : Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound crab meat 2 teaspoons mustard, wet 2 teaspoons mayonnaise 1 tablespoon Worcestershire sauce parsley -- chopped fine 1 egg -- beaten 2 slices bread, stale -- grated salt and pepper
Check crab meat for bits of shell. Combine ingredients and form patties about 3" in diameter; coat with extra bread or cracker crumbs if desired. Fry over medium high heat until golden brown; DO NOT OVERCOOK.
Crab cakes may be baked at 400 degrees for 20 minutes, but only if absolutely necessary.
NOTES : Eastern Shore expatriates sometimes dream about crab cakes, crunchy outside, rich and sweet inside.
