   1                    egg white -- beaten

   2      cups          applesauce

   1      tablespoon    sugar (optional)

                        nutmeg

Beat egg white until it forms a soft peak. Add a little sugar to the applesauce if desired, and fold in egg white. Top each serving with a dash of nutmeg.

NOTES : This recipe is for the little ones, especially thin, picky eaters and those who have been sick. The applesauce is foamy and fun to eat.
